Throw Together Vegetable Soup!


I am sure everyone can relate coming to dinnertime and having no idea what to put on the table for their family.

That was my situation late night and I’m usually organized for meals. But, I had been in a seminar all weekend and really feeling tired. Let’s just add that all the meat was in the freezer frozen solid. All most everything that came to my mind to make for some reason had meat in it. The question hanging in the air was still:

‘What to make?’

My husband mentioned homemade vegetable soup would be good after golfing in the rain all day. My first thought was ‘NO’, but the more I thought it about it I thought sure, why not.

I still had a good amount of vegetables in the refrigerator unused from last week’s meals. In my pantry, I had organic chicken broth. If needed, I also had some organic frozen vegetables in the freezer to complete the variety of vegetables in the soup.

I went to work getting creative and this is the finished Vegetable Soup.

Throw Together Vegetable Soup


Vegetable Soup


1 Tbsp. Coconut Oil

1 Large Onion, chopped

4 Carrots, chopped ***

2 Quarts of Organic Chicken Broth

2 Zucchinis, chopped ***

½ C. Frozen Corn

1 C. Frozen Peas

1 Bell Pepper, chopped

1 to 2 C. Fresh Spinach

3 Cloves of Garlic, Chopped

1 Tbsp. Frontier Tandoori Masala ****

Sea Salt and Ground Pepper, to taste



In a large stew pot, sauté the onion in coconut oil. Wash and chop the carrots and zucchini adding them to the onions. Pour in the 2 quarts of chicken broth. Continue adding the corn, peas and bell pepper. Let these ingredients cook for about 15 to 20 minutes.

Begin to add the Tandoori Masala, along with the sea salt and ground pepper. Right before serving add the fresh spinach and chopped garlic, cook another 5 minutes.

Remember with this recipe use whatever vegetables you have on hand in your kitchen.

***I use organic carrots and zucchini, so therefore I leave the peels on the vegetable. Peels offer extra fiber and nutrition to the soup.

****I use Frontier Tandoori Masala, which is organic and Gluten-Free.
